I would tend to go with on-premise. If you have the phone system on-premise you can add FXS & FXO cards. I would keep at least one POTS line for backup incase your Internet connection goes down, you can often have the service failover to the POTS line, where you can still have the phone system handle the call if you have an FXO card. Excel for mac show zeros as dash. If you go with something like Asterisk, you can use something like an old desktop to be your new PBX. The only expense is the new VoIP phones and the PoE switch. I think going with POTS lines for fax machines is still the way to go. Some people have issues with the VoIP adapters.
Like if I call the echo test feature (which negotiates a call from the softphone to the server only) then I get one way audio. I can hear the echo test instructions yet when I speak it doesn't hear me, hence doesn't repeat anything. When I call another extension I can get two way audio, yet I'm certain that it needs the called party to initiate audio before it will allow audio to be recognized from the acrobits phone (Don't quote me on this, but I recall something similar to this experience). When calling another extension the audio path is from softphone to server to extension, the server stays in the audio path.
